Made by Marshall Minaya of Valerie in New York City, this cocktail pays homage to Sasha Petraske’s KT Collins and is named in honor of Petraske’s spouse, Georgette Moger-Petraske.
2 oz. London Dry gin
¾ oz. fennel syrup
¾ oz. refreshing lemon juice
1 dash celery bitters
Pinch of salt
Soda, to leading
2 dashes Peychaud’s bitters
Resources: shaker, strainer
Garnish: fennel frond
Include the gin, fennel syrup, lemon, celery bitters, and salt to a shaker, insert ice and shake to chill. Strain into an ice-stuffed Collins glass and leading with soda and 2 dashes of Peychaud’s bitters. Garnish.
Fennel Syrup: Include 3 cups of h2o and 3 cups of sugar to a medium-sized pot on medium-significant heat. When the sugar dissolves, add 4 cups of chopped fennel (bulbs and tops) and 1 slim ginger slice, and stir often.
