Turkey Enchiladas

Turkey enchiladas are a really easy dinner idea; especially if you're in the mood for mexican food.

What you'll need to make turkey enchiladas...

Recipe Ingredients:

  • approximately 4 cups of leftover turkey meat

  • 3 cups of grated cheddar cheese

  • one medium onion chopped and sauteed

  • one clove of garlic minced and sauteed

  • salt and pepper to taste

  • approximately 4 cups leftover turkey gravy or substitute with gravy packets, cream of chicken soup, etc.

  • corn tortillas (not flour they get soggy)

  • enchilada sauce - one small can or two packets

How the turkey enchiladas are made...

Directions:

  • Place boneless leftover turkey in large pan with sauteed onion and garlic and just enough gravy to make a think meaty and goopy mixture. Salt and pepper to taste. Add enchilada sauce to remaining gravy and heat thoroughly.

  • Next you need to heat corn tortillas on grill or frying pan until flexible. Drop a glop of mixture onto tortilla with a sprinkle of shredded cheese and roll up like a cigar. Place in casserole pan. Fill pan one high as full as you can. Pour gravy and enchilada sauce mixture evenly over rolled tortillas until they are all covered but not drowning. Sprinkle liberally with shredded cheese.

  • Bake for 45 minutes at 360 degrees Fahrenheit. Serve on a bed of shredded lettuce with rice and beans. Garnish with avocado slices and sour cream. Sprinkle a little chili powder over it all.
