Very easy sugar cookie recipe with a royal icing recipe too. Perfect for the holidays and special occasions

What you will need to make these easy sugar cookies...

Cookie Ingredients:

  • 1 cup butter softened

  • 1 cup sugar

  • 1 large egg

  • 1 teaspoon vanilla

  • 2 teaspoons baking powder

  • 3 cups flour

How the sugar cookies are made...

Directions:

  • Preheat oven to 400 degrees.

  • In a large bowl, cream butter and sugar.

  • Beat in egg and vanilla.

  • Add baking powder and flour one cup at a time, mixing after each addition.

  • The dough will be very stiff; blend in last cup of flour by hand.

  • Do not chill dough.

  • Divide dough into 2 balls.

  • On a floured surface, roll out dough to about 1/8th inch thick.

  • Dip cookie cutters in flour before cutting out shapes.

  • Bake cookies on an ungreased cookie sheet on middle rack of oven for approx 8 minutes - or until cookies are lightly browned.

  • Makes approximately 3 dozen cookies.

Royal Icing Ingredients:

  • 2 large egg whites

  • 2 teaspoons lemon juice

  • 3 cups icing sugar

  • food coloring

  • Sprinkles or candies - optional

How the royal icing is made...

Directions:

  • Mix egg whites with a fork until a little bubbly

  • Add lemon juice and icing sugar

  • Mix well.

  • Divide icing into seperate containers

  • use food coloring to create different Halloween colors

  • Decorate completely cooled cookies

  • Immediately cover with sprinkles or candies if desired

  • Leave to dry on cooling racks for a couple of hours - or until icing is hard to the touch

  • Makes enough icing to generously cover one batch of sugar cookies
