Roasted Pumpkin Seeds
Seeds from one, two or three pumpkins
Olive oil
Salt
Remove seeds from pumpkin(s) and discard any pulp. Place seeds in colander - wash and drain well. Line cookie sheet with tin foil. Pour generous amount of olive oil and salt on cookie sheet. Put washed seeds on cookie sheet. Move the seeds around on the cookie sheet with your hand - coating seeds liberally with oil and salt. Make sure the seeds are spread out well and are not piled on top of each other. Bake at 275 degrees for one and a half hours - stirring once.
This healthy snack has become a Halloween tradition in my house.
