Roast Chicken Recipe
for the inexperienced cook

A simple roast chicken recipe with easy to follow directions.

What you will need - Ingredients:

  • Whole Chicken

  • Olive Oil

  • Salt

  • Pepper

  • Paprika

  • Water

  • Potatoes and carrots-(Optional); cut into large circles.

How it's made - Preperation:

  • Pre-Heat oven to 400 degrees F (200 degree celsius).

  • Wash the chicken and remove the neck and organs (usually found in the cavity).

  • Discard or save the neck and organs for future use; example: making chicken stock for soup!

  • Dry the chicken with paper towels or a clean cloth.

  • Put a little bit of olive oil in a very small bowl.

  • Use a cooking brush to brush the entire chicken, including the cavity, with the olive oil.

  • Generously season the chicken, including the cavity, with salt, pepper, and paprika.

  • In a roasting pan or large casserole dish, add enough water to make a layer of water at the bottom of the dish (This will help keep the chicken moist and expedite the cooking process of the potatoes).

  • Add the potatoes and carrots, if so desired.

  • Season the potatoes and carrots with salt, pepper, and paprika.

Roasting the Chicken:

  • Roast chicken in the oven, uncovered, for about 1 1/2 hours - cooking time may vary. It's roughly 20 minutes of cooking time for every pound of chicken.

Testing the Chicken:

When roasting chicken it is important to cook it thoroughly!

  • Use a sharp knife and cut a deep slit between the thigh and the body of the chicken; if the juice is clear (not pink) it should be done.
