Super Easy Rice Pudding Recipe

An easy and delicious rice pudding recipe with no baking required.

Rice Pudding Ingredients:

  • 1 can evaporated milk (12 ounces, 370ml)

  • 1 can sweetened condensed milk (10 ounces, 300ml)

  • 2 large eggs

  • 1/2 Teaspoon Cinnamon

  • 1 Teaspoon vanilla extract

  • 2 1/4 cups water

  • 2 1/4 cups Instant Minute rice

  • 2 Tablespoons brown sugar

  • 2 medium sized granny smith apples - peeled, cored and chopped (optional)

How the rice pudding is made:

  • In a pan bring water to a boil and add Instant minute rice and brown sugar

  • Remove from heat, stir, cover and set aside

  • In a large pot, heat milk over medium heat, stirring constantly until very hot (not boiling)

  • Remove from heat

  • In a large mixing bowl add eggs, cinnamon and vanilla extract

  • Beat for 1 minute

  • Pour 1/2 the hot milk into the egg mixture and beat for another minute

  • Now add the sweetened condensed milk and beat until well mixed

  • Pour the egg and milk mixture to the pot with remaining hot milk and stir

  • Stir in the chopped apples, if desired

  • Place back on burner and heat until bubbly, stirring constantly

  • Finally, add the cooked instant rice to the pot

  • Continue to heat until mixture starts to thicken slightly - make sure you stir constantly

  • Remove from heat, cover and let stand for 15 minutes

  • Serve warm or cold
