Quick Skillet Lasagna Recipe

Quick lasagna ready to serve

This is a tasty quick meal that will have them asking for seconds.

Recipe Ingredients:

  • 1lb ground beef

  • 1 envelope spaghetti sauce mix (1½oz, 43g)

  • 2 cups of cottage cheese

  • 3 cups uncooked medium-size noodles or spiral noodles

  • 1 tablespoon parsley flakes

  • 1 tablespoon basil or Italian herb seasoning

  • 1 teaspoon of salt

  • 1 can diced tomatoes with liquid juice (28oz, 796ml)

  • 1 cup of water

  • 2 cups shredded mozzarella cheese

How this quick skillet lasagna is made:

  • Lightly brown ground beef in a 12 inch skillet and then drain off any excess fat.

  • Sprinkle ½ the spaghetti sauce mix over the meat.

  • Add the cottage cheese

  • Arrange uncooked noodles in a layer

  • Sprinkle with remaining spaghetti sauce mix, basil (or Italian herb seasoning), parsley flakes and salt

  • Add tomatoes (including liquid juice) and the water

  • Make sure all is moistened

  • Cover tightly (use tinfoil if you don't have a lid)

  • Simmer 30 - 35 minutes or until noodles are done

  • Sprinkle mozzarella cheese over top

  • Return cover and let stand 10 - 15 minutes before serving

  • Makes 6 servings
