Mom's best lasagna

This best lasagna is a family recipe passed down to me by my mother.

What you'll need to make Mom's best lasagna...

Recipe Ingredients:

  • 1 lb lean ground beef

  • 2 garlic cloves - minced

  • 1 tbsp basil

  • 2 cups canned diced tomatoes with some liquid

  • 1 and 1/3 cups tomato paste

  • 10 lasagna noodles

  • 3 cups low fat cottage cheese

  • 1/2 cup grated light parmesan cheese

  • 2 tbsp parsley flakes

  • 2 eggs - or 8 tbsp liquid egg whites

  • 2 cups shredded light mozzarella

How Mom's best lasagna is made...

Directions:

  • Brown meat and drain off fat

  • Add garlic, basil, tomatoes and tomato paste

  • Simmer 30 minutes

  • Cook lasagna noodles

  • Combine cottage cheese, parmesan, parsley and eggs

  • In lasagna pan place a small amount of meat sauce and spread it all over bottom of pan - this will keep noodles from sticking to the bottom of the pan

  • Start with a layer of 3 noodles, 1/3 of the cottage cheese mixture, 1/3 mozzarella cheese, 1/3 of meat sauce - making sure to spread each layer evenly over top of last layer

  • Repeat layers two more times - ending with meat layer on top

  • Bake at 375F for half hour

  • Let stand 10 minutes before serving

Full fat cheeses can be used in place of lighter products. I personally don't taste a difference. I use the lighter products simply because they cut down on my fat and calorie intake.
