Lemon Chicken with Shrimp Fried Rice

Lemon Chicken Recipe

Lemon Chicken Ingredients:

1 - 3 oz (85g) package lemon jello powder
1 TBSP corn starch
1/2 cup chicken broth
2 TBSP italian salad dressing
1 clove garlic
4 boneless skinless chicken breasts

How the lemon chicken is made:

Cut chicken into strips and saute until cooked through. Turn heat down to the lowest setting possbile just to keep meat warm. In a separate bowl, mix dry lemon powder with corn starch. Add broth, dressing and minced garlic. Stir until jello is desolved. Add to cooked chicken strips. Reduce heat to low/med. Cook an additional 3 minutes or until sauce is thickened. Stir frequently.


Shrimp Fried Rice Recipe

Fried Rice Ingredients:

6 cups cooked white rice
1 small onion chopped
2 TBSP butter or margarine
3/4 cup frozen sweet peas
2 cups cooked peeled shrimp
2 eggs
curry powder to taste
soy sauce to taste

How the shrimp fried rice is made:

Melt butter in large skillet. Add onion and saute until cooked. Add rice and heat. Move rice mixture over to side and scramble the two eggs being careful not to chop the egg up into too fine of pieces. Mix egg into rice. Add peas, eggs, curry powder and soy sauce. Mix well. Add shrimp and heat, stirring occasionally, just until shrimp curl.
