This divine strawberry shortcake recipe yields 9 servings and makes a wonderful light dessert.
Did you Know that....
Shortcake is a European creation that goes back to the 1500's and gets it's name from the procedure of adding shortening or butter to flour to make dough. The first strawberry shortcake can be traced back to as early as the mid 1800s.
Strawberry Shortcake Ingredients:
1 and 1/4 cups of all purpose flour
3/4 cup sugar
1/3 cup of butter or margarine - softened
2/3 cup milk
2 eggs
2 and 1/2 Teaspoons baking powder
1/2 Teaspoon salt
a sprinkle of icing sugar
Approximately 1/2 pound of strawberries - sliced
Sweetened whipped cream (Cool whip or similar)
How the strawberry shortcake is made:
Pre heat oven to 400 F
Add all the ingredients except icing sugar, strawberries and whipped cream to a mixing bowl
Beat at medium to high for approximately 2 minutes - scrape the sides often
Pour into a greased 9 inch square baking pan
Place in the oven and bake for approximately 20 to 25 minutes or until lightly browned and center is cooked (check with a toothpick and if it comes out clean it's done)
Cool completely
Cut into 9 squares
Top each piece with a sprinke of icing sugar, sliced strawberries and sweetened whipped cream - see picture above
