An Easy
Shrimp & Scallops Dinner

Now that my son is 18 and getting ready to head off for college, he is suddenly interested in learning to cook. Since he's never done anything more than microwave leftovers he is looking for quick and easy recipes. This is the first meal he made:

Sauteed Shrimp and Scallops with Basmati Rice and Baby Spinach.

Ingriedients
Ingredient amounts will vary according to serving size and taste.

  • olive oil and minced garlic

  • Fresh baby spinach

  • Scallops

  • Shrimp

  • Prepared cajun spice

  • basmati rice

How shrimp & scallops dinner is made

  • Prepare the rice as directed on the package. I use basmati rice because it is the most flavorful in my opinion.

  • Heat up some olive oil and minced garlic.

  • Add the baby spinach and stir until it is cooked but not mushy.

  • Remove from pan.

  • Add a little more olive oil to the pan along with some seasoning. My son likes a prepared cajun spice.

  • Add scallops and shrimp to the pan.

  • Put it all together: Add the rice to a big bowl and stir in the spinach, shrimp and scallops.

I'm so glad that he is interested in preparing healthy meals for himself!
