Easy Mexican Meatloaf

Just follow the recipe to make a delicious easy mexican meatloaf.

Meatloaf Ingredients:

  • 1 lb lean ground beef

  • 2½ cups of crushed taco chips

  • 2 eggs, beaten

  • ¾ cup of Salsa

  • ¼ cup of sour cream

  • 1 cup of Mexicana three blend shredded cheese or shredded chedder and mozzarella blend

  • 1 pkg of taco seasoning (Old Elpaso)

  • 1 small onion, chopped

  • 1 green pepper, seeded and chopped

  • Salt and pepper to taste

  • Topping: approximately ¼ cup salsa and ¼ cup Mexicanna cheese blend.

How the meatloaf made:

  • Pre heat the oven to 350° F. (180° C)

  • Put all the ingredients into a lage bowl and mix thoroughly

  • Shape into a loaf and place in baking dish

  • Bake for approximately 1 to 1½ hours

  • Remove from oven and top with salsa and cheese

  • Put back into the oven for approximately 3 to 5 minutes untill the cheese melts.

  • Makes approximately 6-8 servings

  • Goes great with spanish rice and chilli peppers
