Easy Chicken Cacciatore

What you'll need to make this easy chicken Cacciatore...

Recipe Ingredients:

  • Approx. 3 cups cooked cubed chicken meat

  • 3 cups sliced mushrooms

  • 1/2 of a green or yellow or orange sweet bell pepper - sliced

  • 1 - 798ml can diced tomatoes

  • 1/4 red onion chopped

  • 1 small can tomato paste

  • 1/2 tsp oregano

  • 1 tsp parsley flakes

  • cinnamon to taste - I use 1/4 - 1/2 tsp

  • Shredded cheese and/or parmesan cheese

  • Enough spaghetti noodles for number of guests

How the chicken cacciatore is made...

Directions:

  • In skillet over med/low heat, saute mushrooms, bell pepper and red onion until desired tenderness

  • Add chicken, tomatoes, tomato paste, oregano, parsley and cinnamon

  • Taste and add more cinnamon if desired

  • Stir well

  • Once heated, turn down to low heat and simmer with lid on while you cook spaghetti noodles - stirring once in a while

  • When noodles are cooked place layers in pasta dishes - starting with spaghetti on bottom, sauce next and top with cheese(s)

  • I put the pasta dishes in the microwave for a few seconds to melt the cheese

  • Serve immediately

  • This recipe will make enough sauce to feed 6 people
