Easy Cheesy Chicken Enchiladas

Try something different for your weeknight dinner with this easy chicken enchilada recipe.

What you will need - Ingredients:

  • 1 can condensed cream of chicken soup

  • 1/2 cup sour cream

  • 1 cup salsa

  • 2 tsp chili powder

  • 2 cups left over shredded or cubed chicken meat

  • 1/2 cup shredded monterey jack cheese

  • 6 - 6 inch or 3 - 10 inch soft flour tortillas

  • washed and sliced green onion - for garnish

How the chicken enchiladas are made:

  • Mix soup, sour cream, salsa, and chili powder

  • Combine 1 cup of the liquid mixture with the chicken and cheese

  • Divide chicken mixture up among tortillas

  • Roll tortillas - being sure to tuck the ends inside - and place seam side up in 8X11 inch baking pan

  • Pour remaining liquid overtop

  • Cover and place in oven on center rack

  • Bake at 350F for 40 minutes

  • Sprinkle with green onion

  • If using the larger 10 inch tortillas, cut in half before serving

  • Makes six servings

This is my husband's favorite meal!
