Easy Blueberry Pie Recipe

A very easy way to make a delicious blueberry pie.

Blueberry Pie Ingredients:

  • 4 cups of fresh blueberries or thawed frozen blueberries (divided)

  • 3/4 cup of blueberry cocktail or juice

  • 1 Tablespoon of lemon juice

  • 4 tablespoons corn starch

  • 1 cup sugar

  • 1 pre-made pie shell (or substitute with graham cracker pie crust)

How the blueberry pie is made...

Directions:

  • Start by baking pie shell following package directions and then set aside to cool

  • Next pour blueberry juice and lemon juice into a pan and bring to a boil

  • Once boiling remove from stove and add corn starch and sugar to the juice.

  • Vigorously stir using a wire wisk

  • Place back on stove and add 2 cups of blueberries

  • Bring to a boil while stirring contantly

  • Turn heat down to low and simmer for 10 minutes, stiring occasionaly

  • Place remaining 2 cups of freshh blueberries into pie shell

  • Pour blueberry juice mixture over the fresh blueberries in the pie shell

  • Let set for 2 hours in refrigerator

  • Serve with vanilla ice cream

It's the perfect recipe for summer when it's too hot to use your oven for long periods of time.
