Easy Chicken Spinach Bake

Chicke spinach bake

This easy chicken and spinach bake with pasta and cheese makes a wonderful weeknight dinner.

Recipe Ingredients:

  • 1 1/2 cups uncooked penne pasta

  • 1 pkg. fresh spinach leaves (283g/10oz size bag)

  • 1 lb cooked chicken cubes

  • 1 tsp dried basil

  • 1 1/2 cups jarred pasta sauce

  • 1/2 can diced tomatoes drained (796ml/28oz size can)

  • 1/4 cup light cream cheese

  • 1 cup shredded mozzarella cheese - divided

  • 2 tbsp parmesan cheese

How the chicken spinach bake is made:

  • Preheat oven to 375F

  • Cook pasta - adding spinach leaves to water for the last minute

  • Meanwhile, in skillet cook chicken - if not already cooked - and then add basil, pasta sauce and tomatoes

  • Bring to a boil

  • Stir in cream cheese

  • Drain pasta and spinach

  • Return to pot

  • Add chicken mixture and toss lightly

  • Stir in 3/4 cup of the mozzarella cheese

  • Put all in a 13 x 9 inch baking pan

  • Place in oven on center rack and bake 20 minutes

  • Sprinkle with remaining 1/4 cup mozzarella and 2 tablespoons parmesan cheese

  • Continued to bake 3 more minutes

  • Remove from oven and serve
