Chicken and Mushroom Monterey Burgers

Chicken and Mushroom Monterey Burgers

Recipe Ingredients:

  • 4 boneless skinless chicken breasts

  • 2 tbsp oil

  • 10 medium sized fresh mushrooms sliced

  • 1/2 medium onion chopped

  • grated monterey jack cheese

  • mayonnaise

  • 4 hamburger buns

How the chicken burger is made:

  • In skillet, heat oil over medium heat and saute chicken breasts until cooked through and lightly browned on each side

  • Remove from pan and keep warm

  • Put sliced mushrooms and chopped onion in skillet and saute until onion is no longer opaque

  • Put chicken back into pan and top with grated cheese

  • Turn heat off on stove and cover skillet with lid until cheese is melted

  • Put a light layer of mayonnaise on each side of hamburger bun

  • Place chicken breast on bun

  • Top with mushroom and onion mixture

  • Top with top half of bun

  • Cut in half and serve

  • This recipe serves four but can easily be halved or doubled if needed
